Our path toward greater sustainability started in the early 2000s as a quest to enhance the freshness of our food without compromising our commitment to quality. The notion of buying from the farmer “down the street” was brought to life as we became more involved in the agricultural community via agricultural conferences, which allowed us to connect with farmers to discuss our desire to support local food production. The interest from the farming community was overwhelming. Thus, the Parkhurst purchasing team researched, analyzed, and individually vetted each farm that we partner with, developing the standards that we use to develop our agricultural partnerships today.
As our involvement in the agricultural community grew, we became active members of various sustainable farming groups throughout our geography. Our partnerships with sustainable farmers inspired us to launch our Know Your Source program (long before eating local became a commonplace trend). Know Your Source has allowed us to work directly with farmers and small business owners to forge trusted and fruitful relationships and ultimately serve nutritious and sustainably sourced food to our guests. We continue to partner with and promote profitable farms that produce healthy food while respecting the natural environment.
